Restrictions, restrictions. Who said a cream of mushroom soup needs to be made from one kind of mushroom? The possibilities are endless. This is the cheesiest and creamiest mushroom soup you can ever have.
For this recipe, we are going to use 3 kinds of mushroom. If their was a larger variety where I live, I would have added more. But, this variation of mushrooms is more than enough.
- 200 grams of White Button mushrooms
- 200 grams of Oyster mushrooms
- 7 pieces of Dried Shiitake mushrooms
- 1 medium sized onion
- 4 cloves of garlic
- 4 tbsp of butter
- 2 tbsp of olive oil
- 200 grams of Parmesan cheese
- 200 grams of Brie (cheese)
- 2 cups of heavy cream
- 1.5 litres of white chicken stock
- a pinch of cinnamon
- a pinch of nutmeg
- a pinch of black pepper
First of all, your going to soak your Shiitake mushrooms in hot water for 20 minutes until they are nice and pulp.
Next you’re going to chop your onions finely. My lovely sous chef knows that it hurts the eyes just by looking at it, she then signals to me by squinting her eyes that this is the round white thing that make your eyes hurt.
Its time to prepare the mushrooms. If you find dirt on them, gently wipe them with a kitchen towel to remove dirt.
After than, roughly chop all of your mushrooms. Reserve the Shiitake mushrooms water, it is very flavourful and we will use it in the soup.
Finally, prepare your Brie cheese. This cheese will not melt into the soup if you cut it into bug pieces. What you can do is cut it into small pieces and then keep some cubes to add to the soup after your done do that you can bite into some cheese when drinking the soup.
Firstly, you are going to sautee some onions in the butter and olive oil mixture, once they are a bit translucent add your mushroom.
Once they have reduced in volume you are going to move your mushroom mixture to a blender and pulse them until you have tiny pieces of mushroom.
Now, return the mushroom mixture back into the pot and add your Parmesan cheese and Brie. Once they have completely melted in, add your cream and chicken stock. Boil and reduce. Add your spices and taste. Once you have your desired consistency. Serve.
